Making Sushi Rice

Over 300 varieties of Japonica short grain rice grown in water-filled paddies across Japan are suitable for the preparation of sushi rice (shari). Succulent, pleasantly chewy and slightly sweet, it maintains excellent texture when cooked correctly. Using the proper preparation techniques and utensils will ensure each grain of rice is perfectly coated with sushi vinegar, glistening like crystal and ready to be enjoyed.
