Makizushi is sushi rolled with a mat, usually incorporating dried seaweed sheets known as nori. Good makizushi should be of an even thickness throughout, and the filling should lie in the center wherever the roll is cut. Traditionally, hosomaki or thin rolls are made with a single filling such as tuna, cucumber, gourd shavings or pickled vegetables. The rolls are served sliced into six pieces with their cut surface facing up. Thick rolls or futomaki contain a number of ingredients with complementary flavors and are often consumed at festive gatherings.
