Bamboo Leaf Carving

Broad-leaf bamboo (sasa) leaves have been used in the storage and preservation of fresh food for centuries in Japan. Due to their high levels of salicylic acid, they help prevent decay and have insulating and deodorizing properties that make them the perfect sushi accompaniment. The carved designs range from simple partitions to ornamental works of art. The partitions are used between sushi rolls and nigiri so the nori seaweed doesn’t adhere to the nigiri, as well as between nigiri that are cooked or incorporate sauces to prevent the transfer of colors and aromas.
