Japanese Needlefish

Japanese needlefish (sayori) are beautiful silvery fish and their arrival is said to usher in spring. Early winter sayori is especially coveted at sushi restaurants because the fish is more flavorful after acquiring extra fat to prepare for the cold winter. Although spring sayori has a lighter flavor, the bones of the larger fish make it harder to prepare and are sometimes called “door nuts” (kannuki).
