Over the past three decades Atlantic Salmon has made remarkable growth in the Japanese sushi market. It became the most popular neta for nigiri sushi in 2013 and continues to be the number one sushi topping across Japan today. Nama Atlantic Salmon is mainly imported fresh-chilled from Norway where it is ocean-farmed near the arctic circle and available year-round. The Norwegian salmon grows more slowly in ice-cold waters, becomes fattier, and is vibrant orange in color. Salmon has flesh which splits apart easily so a minimal amount of pressure should be applied when filleting and slicing it.
